Hi! I’m Niki Tibbetts, owner of Aunt Niki’s Cookies! I was born and raised in Worms, Nebraska. My loving and wonderful parents are Gordie and Pat Wieck.
In 1992 I married my husband Brian Tibbetts. Brian is co-owner of the Palmer Service Center. Shortly after being married we had our first son Andrew, followed by Maddi and then Tanner! We bought our farm and cattle in 2001 and have made this place our home ever since! Our oldest Andrew is married to Shayla (Wichmann), and they blessed us with our first grandchild Atleigh Ann! Maddi is married to Brock (Hinrichs), and they are expecting a baby boy due in July! And as for Tanner...well he’s still my favorite roomie!
For 20+ years I worked at Sams Club, and after leaving there I went to work as the secretary at the Palmer Service Center. Inspired by my nine nieces and nephews, I started my cookie business in 2017 and it really took off!
So, I quit the Service Center, built the cookie shack, and have been living my best life doing something I love everyday!!
While it can be stressful at times, it is all worth it to be doing what I love-especially with the support of my friends and family! I hope you enjoy my cookies as much as I love making them!
